Abstract

งานวิจัยนี้มีวัตถุประสงค์เพื่อ 1) วิเคราะห์ศักยภาพชุมชนโดยเน้นการมีส่วนร่วมของสมาชิกสหกรณ์เกษตรอินทรีย์เชียงใหม่ จำกัด 2) พัฒนาขนมขบเคี้ยวจากข้าวกล้องอินทรีย์หักที่เหมาะสมกับศักยภาพของกลุ่มสมาชิกสหกรณ์ฯ และเป็นการสร้างมูลค่าเพิ่ม  และ 3) ศึกษาการยอมรับของผู้บริโภคต่อผลิตภัณฑ์ขนมขบเคี้ยวจากข้าวกล้องอินทรีย์หักของสมาชิกสหกรณ์เกษตรอินทรีย์เชียงใหม่ จำกัด กลุ่มตัวอย่างที่ศึกษาได้แก่สมาชิกสหกรณ์เกษตรอินทรีย์จังหวัดเชียงใหม่จากกลุ่มบ้านดอนเจียง และกลุ่มดอกคำ จำนวน 16 ราย และผู้บริโภคทั่วไปในอำเภอเมืองเชียงใหม่ จำนวน 200 ราย วิธีการวิจัยที่ใช้ได้แก่ การวิจัยเชิงคุณภาพ การพัฒนาทดลอง การปฏิบัติการแบบมีส่วนร่วม และการวิจัยเชิงปริมาณ 

ผลการวิจัยพบว่า สมาชิกสหกรณ์ทั้งสองกลุ่มมีศักยภาพใกล้เคียงกันในเรื่องความเป็นผู้นำของหัวหน้ากลุ่ม ความพร้อมของปัจจัยการผลิต และความร่วมมือของสมาชิกกลุ่ม รวมถึงความร่วมมือระหว่างกลุ่มสมาชิกที่มีอย่างต่อเนื่องสม่ำเสมอ และการมีเป้าหมายเดียวกัน นำมาซึ่งข้อสรุปที่จะสร้างมูลค่าเพิ่มแก่ข้าวกล้องอินทรีย์หักร่วมกันโดยการพัฒนาเป็นผลิตภัณฑ์ข้าวตังหน้าหมูหยอง ทั้งนี้การพัฒนาสูตรข้าวตังหน้าหมูหยองพบว่า อัตราส่วนการใช้ข้าวกล้องหอมนิลหักและข้าวกล้องหอมมะลิแดงหักที่แตกต่างกัน ไม่มีผลทำให้คุณภาพทางประสาทสัมผัสแตกต่างกันอย่างมีนัยสำคัญ (P>0.05) ข้าวตังหน้าหมูหยองที่พัฒนาได้มีปริมาณคาร์โบไฮเดรต ไขมัน และโปรตีนเท่ากับร้อยละ 72.22, 10.54 และ 8.51 ตามลำดับ และให้พลังงาน 417.78 กิโลแคลอรีต่อ 100 กรัม ซึ่งมีคุณภาพความปลอดภัยเป็นไปตามข้อกำหนดมาตรฐานผลิตภัณฑ์ชุมชน ผู้บริโภคร้อยละ 94 ให้การยอมรับผลิตภัณฑ์ที่พัฒนาได้โดยมีคะแนนความชอบโดยรวมเท่ากับ 6.9 จากคะแนนเต็ม 9 ซึ่งหมายความว่าผู้บริโภคชอบเล็กน้อยถึงชอบปานกลาง สามารถเก็บรักษาได้เป็นระยะเวลา 8 สัปดาห์ ผู้บริโภคให้ความสำคัญในด้านความเหมาะสมของราคาต่อคุณภาพและปริมาณมากที่สุดเท่ากับ 8.6 ที่ระดับราคาขายปลีก 35 บาทต่อถุงซึ่งมี 10 ชิ้น รองลงมาคือความน่าเชื่อถือทางด้านมาตรฐานผลิตภัณฑ์เกษตรอินทรีย์ได้คะแนนเท่ากับ 7.5 โดยผู้บริโภคร้อยละ 96 มีแนวโน้มจะซื้อผลิตภัณฑ์ข้าวตังหน้าหมูหยอง สุดท้าย คือ สมาชิกสหกรณ์ทั้งสองกลุ่มเห็นว่าการมีส่วนร่วมในงานวิจัยนี้ได้ประโยชน์ทั้งในแง่ของการเรียนรู้ การได้โอกาสที่จะพัฒนาศักยภาพของกลุ่มสมาชิกให้สูงขึ้น และมีรายได้มากขึ้นโดยวิธีการสร้างมูลค่าเพิ่ม

This research aimed 1) to study the community potential of Chiangmai organic agricultural cooperative’s members by emphasizing on their participatory 2) to develop cracker from broken organic brown rice which was suitable to their potential and value added and 3) to study the acceptance of consumers for the cracker developed from broken organic brown rice of Chiangmai organic agricultural cooperative. The sample groups of this study were 16 members from Ban Donchiang group and Dokkham group and 200 consumers in Mueang Chiangmai district. Research methodologies were qualitative research, development research, participatory action research and quantitative research.

The study found that both groups had a very common potential in the area of leadership, agricultural input and the constant collaboration between each member and each other groups. Moreover, they also had the same goal. These lead to the conclusion to create value added to broken brown rice together by developing to brown rice cracker. The product development process began on the ratio study between 2 kinds of brown rice, Hom Nil and Red Jasmine. It was found that there was no significant different in consumer sensory score when using different ratio (p>0.05). Brown rice crackers developed contained 72.22% carbohydrate, 10.54% fat, 8.51% protein and gave 417.78 kcal/100g. They were safe in accordance with the community product standard of Thailand. 94 percent of consumer accepted the product with slightly to moderately like (6.9), overall liking hedonic score from 9-point hedonic scale. Regarding the shelf-life period of brown rice cracker, the consumers accepted it within 8 weeks. The highest score of marketing mix was 8.6 on the pricing. The consumers accepted the product quality and quantity at the price level of 35 baht per bag of 10 pieces. The second ranking score was 7.5 on the organic agricultural product creditability. Ninety six percent of consumers intended to buy brown rice crackers.

 Finally, the members of Chiangmai organic agricultural cooperative considered that they gained a lot of benefits after participated with this research in term of learning how to produce new product, getting new chance to develop higher potential and getting more income from value added creation.
