Developing the Knowledge and Practice about Food Sanitation of Food Peddlers, Sungnoen District, Nakhon Ratchasima Province

ABSTRACT


                The objectives of this action research were (1) to study the knowledge about food sanitation of food peddlers and compared between before and after training and (2) to compare food peddler practice both before and after training. The samplings were 40 food peddlers who sold food in Sungnoen district, Nakhon Ratchasima Province. Thus, the practical training about sanitation in food peddlers for these business operators was implemented. The data was collected by questionnaire and it was analyzed by frequency, percentage, means and t-test.


            The result found that the personal characteristics of food peddlers were female (52.5%), age 40-49 years old (45.0%), married (92.5%), had graduated from the primary education (47.5%), lived in Sungnoen district (77.5%), had been in food peddler occupation fore less than 6 years (47.5%), had 1 assistant (52.5%), had never been trained about food sanitation (75.0%). Out of all respondents, 42.5% of them sold ready-made food; secondly, 25% of them sold fresh and dry food. For the knowledge of these food peddlers, the average score of 5.40 before training was found, after training the average score of 9.85. The average score of knowledge after training was higher than before training with statistical significance (P<0.05). For the sanitation practice of these food peddlers, before training, the average score of 4.06 was found, after training the average score were 5.00. The average score of sanitation practice after training was higher than before training with statistical significance (P<0.05).
