Abstract

บทคัดย่อ

การเลือกซื้ออาหารถือเป็นปัจจัยสำคัญ ทำให้ได้อาหารที่สะอาด ปลอดภัย ซึ่งส่งผลต่อภาวะโภชนาการของคนเรา ดังนั้นการศึกษานี้มีวัตถุประสงค์เพื่อศึกษา ความรู้ ทัศนคติ และการปฏิบัติการซื้ออาหารของประชาชน ตำบลสาวะถี อำเภอเมือง จังหวัดขอนแก่น ซึ่งเป็นการศึกษาแบบเชิงพรรณนา ระยะเวลาที่ศึกษาตั้งแต่ ตุลาคม 2556 – กุมภาพันธ์ 2557 จำนวนกลุ่มตัวอย่างทั้งหมด 134 คน วิเคราะห์ข้อมูลเป็น ร้อยละ ค่าเฉลี่ย และส่วนเบี่ยงเบนมาตรฐาน

            ผลการศึกษา พบว่า ความรู้ในการเลือกซื้ออาหาร ระดับสูงร้อยละ 67.16 ส่วนด้านทัศนคติอยู่ในระดับสูง ร้อยละ 64.18 ด้านความถี่การเลือกซื้ออาหารที่ซื้อส่วนใหญ่ คือ เนื้อสัตว์และผลิตภัณฑ์ (ยกเว้นเนื้อวัว และเนื้อเป็ด) ผักและผลไม้ อาหารประเภทถั่ว โดยทั้งหมดส่วนใหญ่ซื้อจากตลาด ขนมปัง น้ำมันพืช กะทิ อาหารพร้อมรับประทานประเภทถุง อาหารกึ่งสำเร็จรูป อาหารเครื่องปรุงรส (ยกเว้น น้ำส้มสายชู) น้ำผลไม้ และปลากระป๋องโดยทั้งหมดส่วนใหญ่ซื้อจากร้านโชว์ห่วย/ร้านค้าในชุมชน และส่วนใหญ่ที่ไม่ซื้อ คือ ข้าว เนื่องจากผลิตเองเป็นส่วนใหญ่ รวมถึงอาหารพร้อมปรุง ผักกระป๋อง และผลไม้กระป๋อง ด้านการปฏิบัติทางด้านซื้ออาหาร มี 3 หมวด คือ 1.หมวดเนื้อสัตว์และผลิตภัณฑ์ ได้แก่ เนื้อสัตว์เลือกซื้อที่มีสีแดง หรือสีชมพูอ่อนมากที่สุด อาหารทะเล ส่วนใหญ่เลือกไม่มีกลิ่น ไข่ ส่วนใหญ่เลือกสีขาวนวล ผัก ส่วนใหญ่เลือกมีรอยแมลง หรือสัตว์กัดเจาะเล็กน้อย ผลไม้ส่วนใหญ่เลือกดูสีของผลไม้เพื่อบ่งบอกความแก่ อ่อนของผลไม้  2.หมวดอาหารประกอบ คือ น้ำมันส่วนใหญ่เลือกมีฉลากติดที่ขวดบอกวัน เดือน ปีที่ผลิต และวันหมดอายุ และ 3. หมวดอาหารสำเร็จรูป และอาหารกึ่งสำเร็จรูป ได้แก่ อาหารถุงพร้อมรับประทานและอาหารถุงสำเร็จรูปส่วนใหญ่เลือกมีความสะอาด ปลอดภัย    อาหารกึ่งสำเร็จรูปและอาหารกระป๋อง ส่วนใหญ่เลือกวัน เดือน ปี หมดอายุ อาหารแช่แข็งและอาหารพร้อมบริโภค ส่วนใหญ่ไม่ได้ซื้อ  ปัจจัยทางการตลาดทั้ง 4 ด้านที่มีผลต่อการซื้ออาหาร คือ คุณภาพสินค้า ราคาเหมาะสมกับคุณภาพ ความสะอาดของร้าน และ มีการโฆษณาอย่างทั่วถึง  

ดังนั้น เพื่อให้ประชาชนเลือกซื้ออาหารได้ดีขึ้น ควรให้โภชนศึกษาแก่ประชาชนในเรื่อง การซื้อผัก ผงชูรส อาหารกระป๋อง เพื่อให้สามารถนำความรู้มาประยุกต์ใช้ในการซื้ออาหารอย่างถูกต้อง และเหมาะสม  

ABSTRACT

While purchasing food it is of importance to select safe and clean products which assure an overall good nutritional status. This descriptive study investigated the knowledge attitude and food purchasing practices of individuals living at the Sawatthee subdistrict of the Khon Kaen municipality district of the Khon Kaen province. Data was collected from October 2013 to February 2014 from a total of 134 households. The data was analyzed and are presented as percentage, mean and standard deviation.

It was found that the knowledge to purchase safe and high nutritious food was high (67.16%). Also the attitude among participants to buy good food was considerably high with 64.18%. Meat and meat products were the most chosen food items. Among the different sources of meat beef and duck was rarely taken. Vegetables, fruits and legumes were mostly purchased at the local market whereas, bread, vegetable oils, coconut and milk, seasoning ingredients (exception vinegar), fruit juice and canned fish were mostly brought from the local village store. Rice was usually not purchased as it was grown by the consumers themselves. Ready-to-eat food, canned fruit juices and canned vegetables were not purchased often.

Food purchasing practices could be divided into three categorizes; 1) for meat and meat products and vegetables: preferred items were red meat or pale red meat, odorless seafood, eggs with ivory color, vegetable without insects and traces of small animal bites, appealing color was important for the selection of fruits: 2) food additives/processing: production- and expiry date of oils were likely to be observed, and 3) cooked and semi-cooked food: for packed cooked food and ready-to-eat packed food cleanliness and safety were of importance, for semi-cooked food and canned food, the expiry date was mostly considered. Frozen and ready-to-eat foods usually were not bought. Four marketing factors influenced food purchasing namely quality of the product, value for money, cleanliness of the food store and wide spread advertisements.

It is concluded that in order to assure that people will have access to food of high nutritional quality health related organizations should provide nutritional education emphasizing meaningful purchasing of vegetable, avoiding monosodium glutamate, and canned food in order to improve the knowledge for correct and proper food purchasing in daily life.
