Abstract

This research is quasi- Experimental study which aimed to study the effects of consuming red rice on glucose levels change of type 2 diabetic patients. Participants were 50 type 2 diabetic patients. They were selected by using purposive sampling and divided into 2 groups: 25 persons in experimental group and 25 persons in control group. The intervention in this study was the red rice consuming. The instruments were glucose levels in blood evaluation form, self-behaviors report and reflective thinking interviews.   Firstly, both groups were provided the knowledge about diabetes and nutrition. Next, the experimental group were required to consume red rice 178 grams per person per day for 5 months whereas the control group were not.  Data were analyzed by using independent t-test and ANOVA test.

The result revealed that the level of Hemoglobin AIC (HbA1C) in experimental group decreased significantly different (p < .01).  When comparing the level of fasting blood sugar (FBS) in experiment group before and after consuming red rice, the result showed that the levels of fast blood sugar (FBS) decreased  significantly different (p < .05).
