Abstract

การศึกษาเชิงวิเคราะห์แบบภาคตัดขวางในครั้งนี้ มีวัตถุประสงค์เพื่อศึกษาปัจจัยที่มีผลต่อพฤติกรรมการบริโภคอาหารของวัยผู้ใหญ่ภาคตะวันออกเฉียงเหนือ กลุ่มตัวอย่างจำนวน 1,145 คน มาจากการสุ่มตัวอย่างแบบหลายขั้นตอนจาก 5 จังหวัด ได้แก่ อุดรธานี นครราชสีมา มหาสารคาม นครพนม และอำนาจเจริญ เก็บข้อมูลโดยใช้แบบสอบถามพฤติกรรมการบริโภคอาหารและปัจจัยที่เกี่ยวข้องโดยใช้ทฤษฎี PRECEDE Model วิเคราะห์ข้อมูลโดยใช้ Binary logistic regression ผลการศึกษาพบว่า ภาพรวมกลุ่มตัวอย่างมีพฤติกรรมการบริโภคอาหารอยู่ในระดับปานกลาง (3.47±0.41) ปัจจัยนำ ได้แก่ ความรู้เกี่ยวกับการบริโภคอาหาร ทัศนคติต่อการบริโภคอาหารอยู่ในระดับปานกลาง (18.25±3.58, 2.86±0.55) และการรับรู้ข้อมูลข่าวสารด้านโภชนาการอยู่ในระดับดี ปัจจัยเอื้ออยู่ในระดับดี (4.12±0.51, 3.97±0.61)  และมีปัจจัยเสริมอยู่ในระดับปานกลาง (3.28±0.78) ปัจจัยที่มีผลต่อพฤติกรรมการบริโภคอาหารของวัยผู้ใหญ่ภาคตะวันออกเฉียงเหนืออย่างมีนัยสำคัญทางสถิติ (p<.05) มีทั้งหมด 9 ปัจจัย ประกอบด้วย ปัจจัยส่วนบุคคล ได้แก่ กลุ่มอายุ  ระดับการศึกษา อาชีพ  สถานภาพสมรส ภาวะโภชนาการ ปัจจัยนำ ได้แก่ ความรู้เกี่ยวกับการบริโภคอาหาร ทัศนคติที่ดีต่อการบริโภคอาหาร  การรับรู้ข้อมูลข่าวสารด้านโภชนาการ และปัจจัยเอื้อ จากการศึกษาในครั้งนี้หน่วยงานที่เกี่ยวข้องควรส่งเสริมและดำเนินการนโยบายการส่งเสริมสุขภาพและโภชนาการ การปรับพฤติกรรมการบริโภคอาหาร และรณรงค์ให้ประชาชนบริโภคอาหารอย่างเหมาะสม ให้มีสุขภาพดีอย่างยั่งยืน

 

This cross-sectional study aimed to investigate factors affecting food consumption behavior of adults in northeastern of Thailand. The Multistage cluster sampling were performed by randomly selected 1,145 subjects from 5 provinces as follows; Udon Thani, Nakhon Ratchasima, Maha Sarakham, Nakhon Phanom and Amnat Charoen. Data were collected by questionnaires on food consumption behavior and related factors using PRECEDE theory. Data were analyzed by using binary logistic regression. The result showed that the level of overall food consumption behavior was moderate (3.47±0.41). Predisposing factors such as knowledge about food consumption and attitude toward food consumption was moderate (18.25±3.58, 2.86±0.55). The perception of nutrition information and enabling factors was good (4.12±0.51, 3.97±0.61) and reinforcing factors were moderate (3.28±0.78). The results of this study found that there were nine factors affecting food consumption behavior of adults in the Northeast Thailand (P<0.05) as follow; personal factors such as age group,  education, occupation, marital status, nutritional status, predisposing factors such as knowledge, attitudes, perception and enabling factors. According to this study, related organization should promote health promotion and implement nutrition policies for dietary habits modification. Additionally, there should be a campaign on proper food consumptions for sustainable health.
