Abstract

บทคัดย่อ

การวิจัยครั้งนี้มีวัตถุประสงค์เพื่อ 1) ศึกษาพฤติกรรมการบริโภคอาหารของผู้สูงอายุที่มีสุขภาพที่ดี และ       2) เพื่อถ่ายทอดองค์ความรู้ตำรับอาหารพื้นบ้านเพื่อการมีสุขภาพที่ดีสำหรับผู้สูงอายุสู่ตัวแทนครัวเรือน ในหมู่บ้านวัฒนธรรมนาอ้อ 9 ชุมชน ตำบลนาอ้อ จังหวัดเลย เก็บรวบรวมข้อมูลจากกลุ่มเป้าหมายที่เป็นผู้สูงอายุที่มีอายุ 70-97 ปี มีสุขภาพร่างกายแข็งแรงดี ไม่มีโรคประจำตัว จำนวน 83 คน และแม่บ้านและเยาวชนในครอบครัวที่มีผู้สูงอายุ ตั้งแต่อายุ 60 ปีขึ้นไป ชุมชนละ 5 คน รวม 45 คนเลือกกลุ่มเป้าหมายโดยวิธีการบอกต่อ เก็บข้อมูลโดยใช้แบบสัมภาษณ์และประเด็นการสนทนากลุ่ม แล้วบันทึกผลพฤติกรรมการบริโภคอาหารเพื่อสุขภาพผู้สูงอายุ ผลการศึกษาพบว่า ผู้สูงอายุตำบลนาอ้อ โดยยึดหลักการบริโภคที่มุ่งความอิ่มและสุขภาพ (ร้อยละ 48.77 และ 20.00) ตามลำดับ ส่วนการเลือกอาหารและวิธีการบริโภค ส่วนใหญ่นิยมอาหารท้องถิ่น (ร้อยละ 78.31) รับประทานวันละ 3 มื้อ (ร้อยละ 93.98) โดยรับประทานข้าวเป็นหลัก (ร้อยละ 100.00) ชนิดของอาหารในแต่ละมื้อมีประเภทเนื้อสัตว์ ผัก แจ่ว และผลไม้ (ร้อยละ 92.20, 85.54, 71.08 และ 62.65) ตามลำดับ ส่วนตำรับอาหารที่ผู้สูงอายุที่มีสุขภาพร่างกายแข็งแรงดีบริโภคประจำ มีจำนวนรวม 54 ตำรับ โดยแบ่งเป็น 7 ประเภทดังนี้  อาหารประเภทแกงรวม 24 ตำรับ อาหารประเภทแจ่วหรือป่นที่รับประทานร่วมกับผักสด ผักลวก และหน่อไม้ต้ม รวม 7 ตำรับ อาหารประเภทหมกและอั่วรวม 11 ตำรับ อาหารประเภทซุบ รวม 3 ตำรับ อาหารประเภทลาบและก้อยรวม 4 ตำรับ อาหารประเภทนึ่งรวม 2 ตำรับ และอาหารประเภทปิ้งย่างรวม 3 ตำรับ วัตถุดิบที่ใช้ในการประกอบอาหารส่วนใหญ่เป็นพืชผักที่หาได้ตามท้องถิ่น เนื้อสัตว์ที่นิยมใช้ส่วนใหญ่เป็นปลาชนิดต่างๆ ผลการถ่ายทอดองค์ความรู้ตำรับอาหารเพื่อสุขภาพสำหรับผู้สูงอายุสู่ตัวแทนครอบครัวที่มีผู้สูงอายุโดยการจัดประชุมพบว่า ผู้รับการถ่ายทอดมีความร่วมมือพอใจและจะนำความรู้ไปใช้เพื่อจัดทำอาหารให้เหมาะสมกับผู้สูงอายุ และจะรักษาสืบทอดอาหารเพื่อสุขภาพสำหรับผู้สูงอายุต่อไป

Abstract

        The objectives of this study were 1) to investigate food consumption behaviors of healthy elderly residents and 2) to share their healthy foods with representative households in Na-o cultural village, Na-o district, Loei province. The subjects were 83 residents of Na-o cultural village, Na-o district, Loei province, who were aged 70-97 years old and had no diseases, together with 45 local elderly cousins. The snow ball technique was used for subject selection. In-depth interviews and focus group discussions were used for data collection. The results showed that the majority of subjects were concerned about feeling full after eating food followed their health status, as their principle food consumption behaviors (48.57% and 20.00%, respectively). They normally ate local dishes (78.31%) and consumed 3 meals a day (93.83%). The main dishes were rice, followed by meat, vegetable, chili paste, and fruits (100.00%, 92.77%, 85.85%, 71.08%, 62.65%, respectively). There were 54 recipes that contained traditional foods for health. They were classified into 7 groups. There were 23 curry recipes, 7 recipes of dip, 11 recipes of foods cooked in banana leaves, 3 pounded recipes, 4 salad recipes, 2 steamed recipes, and 3 grilled recipes. The majority of ingredients in the traditional recipes were local vegetables and fishes. The results showed representative households in Na-o cultural village satisfied the values of their local wisdom of healthy foods for elderly.
