บทคัดย่อ

     มะม่วงเป็นผลไม้เศรษฐกิจของประเทศไทย โดยในประเทศไทยสามารถปลูกมะม่วงได้ตลอดทั้งปี ซึ่งมะม่วงที่เพาะปลูกมีทั้งที่เป็นมะม่วงรับประทานดิบและรับประทานสุก สำหรับมะม่วงรับประทานสุกเท่านั้นเป็นที่นิยมและสามารถจำหน่ายในตลาดต่างประเทศได้ จากการศึกษาที่ผ่านมาพบว่ามะม่วงมีคุณค่าทางโภชนาการสูงในมะม่วงรับประทานสุก สำหรับมะม่วงรับประทานดิบเป็นที่นิยมรับประทานในประเทศไทยอย่างแพร่หลาย แต่ยังขาดข้อมูลทางด้านสุขภาพ ซึ่งข้อมูลดังกล่าวสามารถส่งเสริมให้ผู้บริโภคเห็นความสำคัญในการรับประทานมะม่วงรับประทานดิบมากขึ้น ดังนั้นงานวิจัยนี้จึงมีวัตถุประสงค์เพื่อศึกษากิจกรรมการต้านอนุมูลอิสระ ปริมาณเบต้าแคโรทีน ไลโคพีน และฟลาโวนอยด์ของมะม่วงรับประทานดิบสายพันธุ์พื้นบ้านของประเทศไทยหลังการเก็บเกี่ยว โดยทำการวิเคราะห์ปริมาณฟีนอลิกทั้งหมด กิจกรรมการต้านอนุมูลอิสระโดยวิธี DPPH และ FRAP ปริมาณเบต้าแคโรทีน ไลโคพีน และฟลาโวนอยด์ โดยวิธี HPLC จากผลการทดลองพบว่าปริมาณฟีนอลิกทั้งหมด กิจกรรมการต้านอนุมูลอิสระโดยวิธี DPPH และ FRAP  ของมะม่วงทั้ง 13 สายพันธุ์ มีค่าระหว่าง 121.99 – 641.75 มิลลิกรัม Gallic acid/ 100 กรัม น้ำหนักสด มี 0.35 – 1.25 มิลลิโมล Trolox/100 กรัม น้ำหนักสด และมี 0.03 – 0.17 มิลลิโมล Trolox/100 กรัม น้ำหนักสด ตามลำดับ และมีค่าแตกต่างกันเพียงเล็กน้อยในแต่ละสายพันธุ์ สำหรับปริมาณเบต้าแคโรทีน พบว่าในมะม่วงทั้ง 13 สายพันธุ์ มีค่าระหว่าง 5.53 – 41.68 ไมโครกรัม/100 กรัม น้ำหนักสด โดยมะม่วงสายพันธุ์ทองดำมีปริมาณเบต้าแคโรทีนมากที่สุด เท่ากับ 42.43 ไมโครกรัม/100 กรัม น้ำหนักสด สำหรับปริมาณไลโคพีน มีปริมาณระหว่าง 0.11 – 0.23 มิลลิกรัม/100 กรัม น้ำหนักสด และพบว่ามีมะม่วงเพียง 5 สายพันธุ์ ที่มีสารไลโคพีน คือ แก้ว มหาชนก น้ำดอกไม้ ทองดำ และพิมเสน สำหรับปริมาณฟลาโวนอยด์ในมะม่วงรับประทานผลดิบทั้ง 13 สายพันธุ์ มีค่าอยู่ในช่วง 24.97 – 172.38 มิลลิกรัม/100 กรัม น้ำหนักสด  โดยมะม่วงสายพันธุ์ “โชคอนันต์” มีปริมาณ ฟลาโวนอยด์ในเนื้อผลมากที่สุด เท่ากับ 172.38 มิลลิกรัม/100 กรัม น้ำหนักสด
